1 stick (1/2 c) butter or margarine, cut in quarters
1 c cold water
1 c all-purpose flour
4 large eggs


  • Heat oven to 400 degrees.
  • Bring butter and water to a boil in a heavy 1-quart saucepan over low heat. Add flour all at once. Stir vigorously with a wooden spoon until mixture forms a ball and leaves side of pan, about 30 seconds. Remove from heat. Cool 10 min.
  • Beat in eggs one at a time, until smooth.
  • Drop heaping teaspoonfuls of dough 3 inches apart onto cookie sheet. Bake 20 to 22 min, until puffed and golden. Remove to wire rack. Cool before splitting and filling.
